As a child I spent hours looking up at the blue sky and seeing the planes that flew over Content, Knowing one day I’d be on one of them: where was one of those great iron birds going to take me?

Ingredients
FOR BLUE SKY
6 tbsp blue curacao 3 tbsp white rum
3 tbsp lime juice
FOR PALE BLUE SKY 1 tbsp blue curacao
1 tbsp cointreau
4 tbsp white rum
11⁄2 tbsp single cream 2 tbsp coconut cream juice of 1⁄2 lime
1⁄2 tsp sugar (optional)
Step 1
For both drinks, just shake all the ingredients in a cocktail shaker over ice.
Step 2
Serve in a chilled cocktail glass, lie back, look up at the sky and dream of summer!
