Caribbean Wash
This is what you ask for when you’re a kid in the Caribbean and you’re thirsty. It’s just suger water with lime, really, and the old folks call it a ‘wash’. It’s a wonderful thirst-quencher.

Ingredients
1 tbsp runny honey
4 tbsp demerara sugar
juice of 5 limes
300ml (1⁄2 pint) water
1 cinnamon stick, broken in half
Step 1
Mix all the ingredients together, starting with the honey and sugar and gradually adding the liquids to make sure everything’s thoroughly blended. Taste to see whether you need more water or sugar.
Step 2
Give it all a good stir to help the cinnamon release its flavour and leave in the fridge, covered, for a couple of hours so the flavour can infuse even more (the demerara should dissolve in this time). Stir, pour over crushed ice and serve.
